Q: Why is baking cacao alkalized?
A: Raw cacao powder is alkalized to neutralize pH resulting in a less acid powder that is darker in color and more consistent in rich flavor. Using raw cacao (acidic) with baking soda (alkaline) often results in unwanted rising. Baking cacao does not react with baking soda resulting in optimal baked creations!
Q: Is baking cacao only good for baking?
A: Absolutely not! You can use baking cacao as you would raw cacao. With baking cacao, you can expect darker color, richer "chocolate" flavor, and less bitterness.
